Our Story

In the bustling markets of Mumbai, where high street chai was often costly, the need for an ​affordable, everyday chai gave rise to the legendary Cutting Chai.

At London Cutting, weʼve embraced this spirit and are on a mission to bring authentic, ​accessible chai to high streets everywhere. Our goal is simple: to make great chai available ​to everyone, ensuring that every cup is a genuine and affordable pleasure.

London Cutting was founded by friends Nihal and Niyas, both passionate about chai, with ​deep roots in their traditions. In India chai is more than just a beverage—it's a daily ritual, ​enjoyed at least twice a day in every household. It’s a moment where friends gather, ​conversations flow, and connections deepen. For Nihal and Niyas, chai symbolizes much ​more than a drink; it's relaxation, a way to reminisce, a platform for open-hearted ​conversations, and a form of therapy. It's during chai time that family and friends come ​together, sharing joy, laughter, and life’s little moments.

This passion for chai led Nihal and Niyas on an incredible journey across India. They ​immersed themselves in the rich chai culture, living with farmers on plantations, learning ​the art of chai-making from the source. After spending years in London, they recognized a ​growing need for authentic, affordable chai. Thus, London Cutting was born, with a mission ​to bring a genuine affordable chai experience to the UK's bustling high streets.

Chai History

Chai, meaning "tea" in Hindi, has a rich history ​dating back over 5,000 years in India. Originally ​consumed as an herbal concoction for medicinal ​purposes, the drink evolved into the masala chai ​we know today—black tea brewed with a mix of ​spices and Milk. Chai became widespread during ​British colonial rule in the 19th century, when tea ​plantations were established in Assam and ​Darjeeling. Over time, chai has become a cultural ​staple in India, often enjoyed in local tea stalls ​called "chaiwallahs" and now loved worldwide for ​its warm, spiced flavor

HOW IS OUR CHAI DIFFERENT AND BETTER

There are alot of Chai brands out there in the ​market claiming to give authentic chai experience, ​however we differ from them by using real raw ​spices that goes through a fresh grinding process ​before a batch is made and are added to the chai ​process at the right time for optimum duration in a ​ratio to give the best taste out there. We have a ​hard “No” take on use of instant mixes, enhancers ​or syrups in our Chai.

TEA

We have partnered with one of the best estates in ​Assam, India to develop a unique Tea leaf blend ​which is why you cannot have London Cutting ​experience elsewhere. This Tea leaf blend is unique ​to us hence making our chai unique. It is not just ​the best but different as well. These are premium ​rolled tea leaves that are sourced directly from ​the estates into our kitchen as well as our blend ​pouches which are available to grab from our ​outlet dukaan.

MILK

We are partnering with organic milk suppliers who ​run dairy farms a sustainable way. We procure ​organic milk from them for ‘YOU’ our customers ​who love to have cow’s milk in their chai. This is the ​authentic way of Indian chai.

We also have a plant-based milk option to cater to ​vegan customers. We use high-quality oat milk to ​go with our chai. Trust me our Oat milk is not any ​less but on par or maybe slightly above our organic ​milk chai.

SPICES

Our spices are raw and procured from authentic ​sources, each of our chai has a perfect spice-to-tea ​ratio. They are ground right before we make a ​batch of chai for almost freshness. Our chai is the ​best because of our recipe. Our recipe takes into ​consideration the right amount of spice to tea, the ​right temperature, and the time for which they are ​brewed together releasing an aroma and flavor ​that are unparalleled.

WATER

We use high-quality water and is an integral ​component that decides the creaminess and ​consistency of our chai. We use water at varied ​proportions for our different chai to deliver the ​best out of our tea leaves and spices. ‘You’ as our ​customer need not worry about it, we have taken ​care of this in our recipes. All ‘You’ need to do is ​come and enjoy!

TRADITIONAL WAY OF SERVING CHAI

Traditionally North and South have their own ways ​of serving chai. However, both follow the pouring ​of chai from a height to the glass held at the ​bottom. At London Cutting we call it ‘The Chai Fall’.


The purpose of Chai fall is to ensure proper mixing ​of the ingredients simultaneously to bring down ​the temperature from the boiling point so that ​customers can enjoy the full taste from the first ​sip without burning their tongue.

NORTH

In the North, brewed chai is poured into a kettle ​with long nose and is kept on fire to keep up the ​heat while waiting for customers. When a chai is ​ordered the chaiwala performs The Chai Fall.

SOUTH

In the South, water is kept boiling in a cylindrical ​closed tin, with tea leaves dipped in hot water and ​milk kept hot from the steam of boiling water. ​When a chai is ordered the chaiwala pours milk into ​a glass and takes the hot water in a long cup which ​is poured through the tea leaves into the glass ​with milk

CHAI + SNACKS = LONDON CUTTING

Chai is usually celebrated with snacks that goes well with it. Snacks range from ​world-renowned Samosas to Vadas, baked to fried. At London Cutting we are ​bringing puffed goods with indian flavor fusion and cookies filled with chai.
